Wash and dry all produce. Preheat toaster oven or oven to 400°F. Trim and thinly slice @scallions{2%unit}. Peel @carrot{1%unit} and grate until you have ½ cup grated.

In a medium bowl, combine the grated carrot, sliced scallions, @shredded red cabbage{1½%cups}, 3 tbsp @sour cream{3%tbsp}, 1 tbsp @white wine vinegar{2%tbsp}, and ½ tsp @sugar{1%tsp}. Toss to combine. Season generously with salt and pepper.

Slice @persian cucumber{1%unit} into thin rounds. Place in a small bowl with another ½ tsp sugar, 1 tsp @water{2½%tbsp}, the remaining vinegar, and a pinch of salt. Toss to combine and set aside to pickle.

Heat a drizzle of @vegetable oil{1%tbsp} in a #large pan{} over medium-high heat. Add @pulled pork{10%oz}, breaking up the meat into pieces with a wooden spoon. Stir in @sweet and smoky BBQ seasoning{1%packet}, @BBQ sauce{¼%cup}, @ketchup{2%tbsp}, and 2 tbsp water. Cook until warmed through ~{5%minutes}, stirring occasionally. Add a splash of water if the sauce seems dry. Season with salt and pepper.

Meanwhile, split @brioche buns{2%unit} in half and toast in the oven until golden ~{3%minutes}.

Fill the buns with the pork mixture, pickled cucumber, and a generous scoop of slaw. Divide between plates and serve with the remaining slaw on the side.
